They made, it from sour rnilk in order to utilize what they .had and. at tho-samc time put a wholesome dish on their tab les. It is high in protein being sometimes known as \the meat dish.\ It is a solid form of pure milk bn semi-cheese. ' The Russians have u beautiful Easter dish made from cottage cheese, sometimes blended with cream cheese then with powdered nuts and honey and formed into a towering mold which is decor ated with paper roses and of course is the centerpiece of the table, But the Swedes, tho Aus trians, the Germans, the Dutch', the French, the Italians whose cottfige ehec.se is Rkotta-^all of us—use cottage cheese. OPEN LETTER FROM FATHER JACK MURPHY biting, cheesed. Also because we ore Vonstnntly Greetings dear Friend: Re: My brother, the Foreign Missionary Priest ^ This intrepid, indefatigable, allvuistic Father Jerry Murphy has begun the magnificent task of building a hospital in Ju An Dong, Korea, for the tubercular and otherwise diseased poor. ■ A committee of friends and neighbors has been formed to stage a benefit party-dance at the South Shore Yacht Club in Freeport, on October 28, 1966. Father Jerry deserves our best. Let me quote a few words from a recent letter to mo: •'Our T.B. Clinic was .started in August, 1965, on an out patient basis. At present, we have 450 registered and receiving medicines. I have to face the reality that among our patients are many who could come every day for a hundred'days without a curb With our medicines, we are prolonging life, but not provcnl- ing T.B., nor controlling it. Those persons rqmain carriers to other members of family and community. Yet, with surgei-y, for many a total cure could be effected in the space of several months. So. . my ambition is to expand the clinic to a building with beds and equipment, and thus provide Chest Surgery.and Isolation Ward Care. I feel confident that our overall plan can he achieved, one stage at a time, with the necessary support coming in . . /' I hope you will help this cause. It is certain that Father Jerry’s effort on the everyday scene of misery will magnify a hundred limes whatever inlevesl or energy we put forth in support. Sincerely your.s.
