Lattin Holds An Albion MS Class 'Spell-Bound' ALBION - On Thursday, May 19, C. W. Lattin, county historian, was guest speaker at a meeting of the Cobblestone Yorkers at the Albion Middle School. Mr. Lattin's topic centered around unusual happenings in Orleans County in the late 19th Century. Getting to the root By Polly Fisher DEAR POLLY - How does one prepare and use ginger root in cooking? -- RH. DEAR RH. - To prepare ginger root, simply peel off the brown papery outer covering, trim off any woody or very fibrous parts and slice, chop or mince the tender, crunchy root within. The recipe will specify how finely the ginger should be cut, but most roots require a fairly fine mince, much as you would prepare are dropped into a sauce, (Ginger can be quite pungent The easiest way to mince it is to drop it into a bl garlic. It's bes t to peel only the portion you'll be using at one time, since the root will be less likely to dry out or mold in storage if unpeeled. Wrap the leftover root in refrigerator. Sometimes the plastic wrap and store in the cut end will dry out or mold slightly after a couple of weeks; if the rest of the ginger seems unaffected, simply cut off the spoiled part. It should keep for two to three weeks easily. For even longer storage, peel the root and cover it with sherry in a tightly covered container. Again, store in the refrigerator.
