We don't know much about what controls appetite in humans. Mechanisms that control appetite have been identified and located in lab- oratory animals. And we assume people have similar abilities. But we're not sure how they work and psychological factors ° also probably are involved. A lot more research will have to be done before we'll know whether one individual utilizes his food more efficiently than another. Some studies with rats have suggested that nibbling - eating less but more often - will produce more body protein and less body fat than eating the sam number of calories at one meal. But studies with other animals and humans have so far failed to show this. And finally, there isn't any research to prove that the proportion of protein, fat, or carbohydrate makes any weight control difference that isn't caused already by the number of calories you consume. Sounds pretty discouraging, WEIGHT CONTROL Last week we talked about weight cu rol - especially the fact that it » not so hard to know how to do it as it is to do it. And especially around Holiday time, one's desire to eat less is sorely taxed. | _ I remember one good gimmick for reducers, though. It works at cocktail parties. The American Spice Trade says consumption of spices, herbs and seasoning vegetables totaled 386 million pounds in 1971, an increase of nearly 42 per cent in less than 10 years. It comes from a type of magnolia tree and resembles a small brown star with many points. Its licorice- like flavor is stronger than that of regular anise, which is the seed of an herb related to parsley and dill. Whole green peppercorns, or unripe Piper nigrum, also are increasingly available in a wine vinegar pack in fancy food stores.. They're suggested for seasoning dips and cocktail snacks, meat, fish and poultry sauces, stuffings and salad dressings. Juniper berries and gumbo file are the old-timers more in demand.
