THE ART OP BREAD-MAKING A Boston (Mass.) paper says a lecture wfs given last evening bt fore the Young Women’s Christian Ass-' ctation, by Mrs. E. P. Evans, entitled ‘‘The Bread We Hat.*’ The subject was treated with spec ial re'erenc* to the art of bread making, in -whicli the lecturer is an expert and a teacher. Sue remarked that women who manage their own kitchen often say that in re spect to a p articular batek cf bread they hsd sood luck or bad luck. She declared there la no luck, but that good bread may be always made with cc-rlainty. She said that the sign now frequently seen of “Home made bread’’ te.stifles to ths fact that the home loaf, made by a competent housewife or cook, is superior to w h it the bakers can produce from their great batches of dough. She o\>jected to the too much kneading of the professional bakers, and to their free use of potato str.rch, which, though not bad in i'^eelt, does not make the best bread, though it permits o f making light bread out of an inferior quality of flour. To make good bread requires but a t ’fling amount of kneading, and the pro cess o f making and baking, as a whole, is nut laboioua, but n t h e r a pleasant t ccu- pation If properly c mduited. But four ingreji.nts are required—flour, yeast, salt and water. In her description ihe lecturer used the term “ wetting’’ as de fining either water, milk and water, clear milk or buttermilk. W ith any one of these good bread can be made. An im perative condition is tliat the yeast shall be pure and sweet. The compressed yeast was recommended as being the least variable, and, on the whole, she preferred it to any other. Every housekeeper or co'^k should have a method of making good yeast for use when compresseil yea?t is not to be had. In general, it n ay be said that the p ro portion is one measure of wetting to two and a half or three measures o f flour. For quantity the flour will vary according to Us quality. A suflacient n c lp e is one quart of wetting, one leaspoonful o f salt and one ounce of compressed yeast. A t a majority of the lairs the show of svrine has been very small and poor. With a few exceptions there has been nothing worthy of mention. W hy is this? The fair managers do not attach enough importancB to their exhibit to offer prem iums varied and high enough to induce breeders of good swine to exhibit The expense, time a r d trouble to show swine are g reat and the accommodation for thi.'i stock at some fairs is poor enough to make a lover o f a good, clean hog forsake showing forever. The swine industry of this country is second to none, and a good show of swine at a fair will attract as much attention as any other exhibit of animals, I know from experience that the expense to an exhibitor is nearly or quite as much as on any o ther animal. I have seen premiums offered for a sow and litter of pigs, and have seen a sow with suckling pigs com peting against a sow and pigs of five or six months of age. Is this justice? But it Ls common and other competitiom are equally ludicrous.
