The Writer on gastronomic subjects gays: “ 1 never knew a p 2 rsou who would confess on the revised version that fish ever tastes as good as it sminds.” The reason is either that the fish Was not fresh or was l);uUy cooked. One who lias c.aten fish served at the table only a few hours after the victim left its briny home, can understand how really delightful it is pos sible for fish to be. S 'ason the fish well and lay it in a baking pan with a little butter and water, and baste frtquenlly : cook ULt'l when lift the fish with a fork it loosens easily from the bones. Thicken the gravy in the pan and add a little lemon juice. A salmon salad can be made from a can of salmon, that will furnish a hearty din ner for six or eight persons. Use either a pound of the cold boiled fish, or the con tents of a can ; pick it fine, and mix it with all the white part of a bucch of cel ery cut in dice, or at least about half the bulk of the fish in celery ; equal the bulk in lettuce, a sliced cold beef, and two cold boiled potatoes, also sliced. In this sea son one or two tomatoes sliced are a pleas ant addition. Now, as a bottle of oil would involve an expense that every one may not care to incur, make a dressing as follows : Put one cupful of vinegar over the fire in a saucepan with a tablespoonful of butter, same of sugar, and a little salt and pepper; stir a teaspoonful of flour into a little c.old water with a very scant half teaspoonful of mustard powder, and add this to the boiling vinegar; stir all for a minute, and then pour very slowly over a beaten egg, beating witli a fork the while ; when this cools, turn it over the salad. Salmon scallops are very good, and may be made from a can of salmon, or the same amount of the cold liih. Chop the fish fine, and mix with half a cup of drawn butter, pepper, salt and a tablespoonful of minced parsley,also half a cupful of bread crumbs ; butter small patty pans or scallop shells, fill with the mixture, strew with fine crumbfi, and brown in a quick oven. The same mixture, with the addition of a little lemon juice and the yolks of two hard boiled eggs rubbed fine, the whole then molded into pear shaped croquettes, rolled in crumbs and oeaten egg, and fried in boiling fat, will give you very delicious croquettes. For boiled cod, the sauce par excellence that turns it into a dish fit for a king, is oyster. There is no special skill r.. quired to boil a piece of cod. The ent directly back of the shoulders is the choice cut. ]jet it lie in salted cold water for an hour; put on in cold water, bring directly to a boil, and allow fifteen minutes for every pound of fish, from the time the water fairly boils. Put half a pint of oysters over the fire in their liquor, and as soon as they boil, skim and lift out the oysters with a colander dipper; add half a pi at. of milk brought to the boiling point and one scant table.spoon(ul of flour, dissolved in a little cold water. Season to taste, re turn the oysters, give one boil and send to table in a boat. Halibut a la Royale is rightly named, but can only be indulged in by a large family, as it requires a large piece and is never a cheap fish. Get, then, a piece weighing five or six pounds, and let it lie for an hour or two in salted water; make incisions on each side of the back bone and fill with a dressing made of half a cup of bread crumbs, two tablespoonfuls of chopped salt pork and pepper and s a lt; if you have it, a teaspoonful of anchovy es sence is a nice addition ; season with pep per and salt, and fill incisions with this. In the bottom of a bake dish put a gill of melted butter and the juice of half a lemon ; lay in the fish, pour over a cup ful of boiling water and bake one hour, covered and bastingoften.
