What's Cookinq - With Jennie? About now gardeners are bringing the bounty — so why not a dinner using fresh vegetables, start to finish: CHICKEN STEW 6 medium tomatoes 2 broiler fryers, cut up 2/3 cup flour Vi cup salad oil 3 medium onions, sliced 1 large eggplant, cut into rdice 3 cups water 2 tsp. chicken boullion Salt — to taste 1 tsp. sugar VA tsp. thyme VA tsp. pepper 1 pound green beans 12 ears corn Cut 4 tomatoes into quar- ters, set aside. Cut remaining two tomatoes into 8 wedges, cover and-refrigerate. Coat chicken with flower, reserving left over flour. Cook chicken in a large Dutch oven in the salad oil, a few pieces at a .time until browned. Remove chicken, add onions to drip- pings> cook until tender. Add remaining flour, stir until blended. Return chicken to pan, add all ingredients except beans and corn. Heat to boil- ing, reduce heat, cover and simmer for 30 minutes, stirring occasionally. Turn heat back to high, add green beans, bring to boil. Reduce heat, cover and simmer 15 minutes. Meanwhile remove kernels from corn. When chicken and vegetables are tender, stir corn into mixture. Top with reserved tomato edges and cook for 5 minutes or until corn is tender. VEGETABLE STIR FRY 4 medium zucchini 3 medium celery stalks 2 medium carrots 2 tbsp. salad oil 2 tbsp. butter VA tsp. seasoned salt VA tsp. pepper Cut each zucchini in half crosswise, then cut each half lengthwise into thin slices, cut slices into matchstick thin strips. Cut celery and carrots into matchstick. Over medium heat, in the oil and butter mixture, cook the celery and carrots, add seasoned salt and pepper. Stir frequently four about 3 minutes. Add zuccini, cook until all vegetables are tender crisp. With a spatula, in a blender until smooth, mixture is thickened and coats fold whipped cream and can- Tear lettuce and spinach into a spoon. Kim Tucker, sister of the bridegroom, was maid of honor and Larry Hutcheon, brother of the bride was best man. A reception was held at the bride's parents home in Lafargeville. On Aug. 3, a reception was held at the bridegroom's parents home in Westville Center. Lois Dragoo catered the food. Lorna Butcher registered the guests. Mrs. Tucker is a 1985 grad- uate of Pittsburgh State and is employed as a cost analyst at A. Schonbek and Company, Inc., of Pittsburgh. He is a 1984 graduate of Clarkson University and is employed as a design engineer at Harris Graphics in Champlain. The couple is now living in Pittsburgh. With a melon ball cut 7 or 8 balls, wrap in plastic and refrigerate for garnish. Cut remaining melon into bite size chunks. In a covered blender, blend melon and lemon juice to make 2 puree.
