Now when you get sofneone who has eaten food all over the world, it is difficult to choose a favorite dish. However, her Chicken Saltim- bocco, an original recipe, is undoubedly my favorite. It was also on the basis of this recipe that Jennie was chosen to compete in the Press Republican Cooking Contest, so it is not only my opinion. The recipe on p. 32 of her cookbook is not difficult and it is superb. There is a certain blending of ingredients that creates a unique flavor. IT IS GOOD TO SEE our friend Ray Dupree back in town. He is busy working on his garden which is always a masterpiece. SPEAKING OF GARDENS, we local resi- dents got hit with a bad frost recently and many of us lost our fledgling plants, even some of those which were covered. GEORGE BERO, now do you really plant plastic flowers? I WAS TELLING GEORGE that I was extremely impressed by his daughter, Stacey's poem in the SRCS 1986 Yearbook which was dedicated to Christie Casey and Chris Inglee. I'm no expert, but the poem seemed to have a very good sense of rhythm. I didn't know that Stacey is a musician and really enjoys writing songs. It shows in her work. WESLEY RICHARDS continues to improve following open heart surgery on June 5th. He is a patient at CVPH in Plattsburgh. SEVERAL PEOPLE HAVE asked us if THE SUN can print colored photographs. We sure can, providing they are not too dark or contain too much red coloring. We can also magnify or shrink parts of the photo. Letter \Welcome tq Corrections Employees Corrections employees and their families who could be transferred to the new Frank- lin County Correctional Fa- cility have a unique opportu- nity. Individuals and groups in the neighboring town of Malone have gotten together to provide an introduction to the town and that part of Franklin County. \Welcome to Malone\ will be a day-long affair on Sat- urday, June 14. Those who attend, from many corrections facilities around the state, are sure to know more about what the local community offers at the end of the day than at the beginning. The morning will begin with an informational meeting at which time local schools, churches, human services, real estate, financial services, Chapter of Com- merce, and local sports will be discussed. Booths where vis- itors may ask questions of community representatives will be open before and after the informational meeting. In the afternoon, bus toui of the area will be offered _ visitors can ha?e a first-hanj look at much of what is talke about in the morning meeting A light breakfast and a luncl will be served free, sponsored by local businesses and com] munity ^ organizations. A wrap-up session will be held in the afternoon so questions can be answered. Overnight packages for participants ai reduced rates have been ar-j ranged at local motels. Corrections employees who] expect to be transferred tc Malone may make arrange-! ments to attend \Welcome toi Malone\ by calling the! Chamber of Commerce at] (518)483-3760. Asked if this was an unusual I event, planners said they'd not j heard of anything like it any- i where else. The idea became a I reality when several members of the community got together to \make it happen.\ Birth Jock Mr. and Mrs. Wallace Jock (Judith O'Jida) of Tampa, Florida are the proud parents of a baby girl, Brandy Nicole, born May 17, 1986 at McDill Air Force Base Regional Hos- pital. Dear Editors, You made a mistake in the repinting of my graduation announcement. My name is Mary Eleanor (Bobbi) Kelley, not R. Kelley. One of the con- venient things about a small- town newspaper should be the fact that the editors usually know or know of the people about whom they're writing. Ms. Bartlett, I know you know me, but if you weren't sure who I was, or if my Conserva- tory made a mistake, you should have called my mother, Gwen Kelley, to make sure. After all, she's the only Kelley in Fort Covington. A small- town operation is no excuse for careless \journalism.\ M.E. Kelley (EDS. NOTE: Mrs. Bar- tlett did not see the release. While I was* re-typing the headlines, in the midst of five calls, I inadvertently put R. instead of M. I was actually making an association with \Rack which is no excuse. You are right. It was pure carelessness and I apologize. PWM.) Local Ladies Travel to Florida Miss Evelyn Latreille and Mrs. Ira Eldred left by plane May 25th from Montreal to Jacksonville, Fla. for a week's stay at the home of Ira and Minda Eldred and daughter, Kerry. They arrived back in Mont- real on June 1st where they were they met by Eileen, Lorna and Maureen Eldred. The temperature in Florida for the week as consistently 90 degrees or more s with little rain. Fort Town Board Meeting Dark Clouds By PAT MUSANTE The news at Fort Coving- ton's Town Board meeting was not good. While one tries to be positive and not an alar- mist, she cannot be a Pol- ly anna either. The new environmental regulatory fee of $6,000.00 was a bombshell. While Supervisor Smith feels it is not a penalty, I can't agree. The assessed fee was based on the DEC findings of gallons of discharged wastewater per day. Different municipalities pay different rates and the Fort's was high. Most officials agreed, in fact, that it was far too high and efforts are being made to dispute the assessment. The consequences of not having a sewage system are becoming expensive. In addition, it was ann- ounced that the estimated cost of putting a cap on the local dump would be $40,000.00 to $60,000.00 per acre, plus engineering fees, inspectors, etc. Some officials seem to feel that the movement toward centralized dumping grows stronger. Now combine the recent skyrocketing cost of insu- rance and we realize that our Stately Big Brother is perhaps becoming a Big Bully.
