Here are sev- eral recipes using dairy products: TROPICAL CHEESE SPREAD 1 8 oz. pkg. cream cheese 1 8*/i oz. can crushed pineapple, drained 2 cups shredded Muenster cheese % cup coconut, toasted in oven l /i cup chopped pecans % cup chopped dried apricots Combine soft cream cheese and pineapple, mixing until well blended. Add remaining ingre- dients, and mix well. If neces-i sary, use a little pineapple liquid to soften, chill and serve with crackers. FROZEN FRUIT SALAD 2 pkg. cream cheese x h cup chopped nuts 1% cups fruit such as pineap- ple, green and red cherries % cup salad dressing 1 cup heavy cream, whipped Blend cream cheese and salad dressing. Add nuts and thoroughly drained fruit. Mix well. Fold in whipped cream. Pour into a mold and freeze. IMPOSSIBLE LASAGNA PIE % cup small curd cottage cheese X / A cup grated Parmesan cheese 1 lb. ground beef, cooked and drained 1 tsp. dried oregano leaves tsp. dried basil leaves » \ 16 oz. can tomato paste 1 cup shredded mozzaretla cheese 1. cup milk 2/3 cup Bisquick 2eggs 1 tsp. salt y 4 tsp. pepper Heat oven to. 400 degrees. Lightly grease a 10\ pie plate. Layer cottage cheese and Par- ,mesan cheese in plate. Mix cooked beef, oregano, basil, tomato paste and % cup moz- zarella cheese: sooon evenly over the top. Beat milk, baking mix, eggs, salt and pepper until smooth, about 15 seconds in a blender or one minute with a hand mixer. Pour into pie plate. Bake until golden brown and knife inserted halfway between center and edge comes out clean, 35 minutes. Sprinklewithremaining cheese, let stand five minutes before cutting. By Sandra Dinneen June sixth was an exhilarat- ing day for the children, staff, and guests of the St. Regis Mohawk School as the 11th annual Science Fair commenced. Each class developed and presented a group project. They dealt with a diverse range of topics which included, good health habits (Pre-K), plant growth (K), parts of the plant (K), a fool high pumpkin patch plus pumpkin cookies to taste (K), clay models of turtles and factual stories about them (K), colors in nature (1), Mammals of the sea (1), and food families (1). All second graders reported on seicnt ist s and t heir inventions, while the third graders did projects on germi nation and animal classification. All children were encour- aged to have an individual pro jeel as well. Rabbits, tropical fish, tadpoles, frogs, a water scorpion, and even a tarantula were great fun for everyone to observe at close range. Experiments were set up concerning mirror writing, expansion and contraction of air, solor heaters, air pressure, volcanoes, glaciers, bottle aixi pipe xylophones, gravity, bridge construction and yeast producing carbon dioxide. Many children identified rocks, leaves, nests, shells, plants, bee hives, and fungi. Models of dinosaurs,- the solar system, various worms and bugs, and a robot that actually lit up and made sounds were made by children from all grade levels. During the afternoon, Smo- key the Bear and Mr. Frank Dorchak, Forest Ranger, visited with the children. Mr. Mitchell and Smoky released a number of weather balloons with messages attached. We wish to express our thanks to Felicia Jock who again organized and coordi- nated this year's fair, and to the judges who had the difficult task of selecting the best pro jects. The judges were: Robert Cree, Director of the Johnson O'Malley Program; Donna Prue, permanent substitute teacher in the Salmon River School District; and Angus Pyke, a 1985 graduate of the Albany College of Pharmacy who is currently working for the St. Regis Health Services.
