On the chance that some of our readers have never cooked venison sor ever heard of lobster «pie,\ we have scoured , local sairces for recipes for both of these dalights. The recipe for the propara- tion of venison comes from the R.T. French Test Kitchen and was genrerously provided to us by Miss Ruth Dubois of that office. We had a lit- tle harder time coming up with a recipe for lobster \pie;® in fact, says Mrs. Irene Muntz of the Rochester Gas and Elec- trie Home Service Dept., \there isn't such a recipe in all my files.\ But that didn't dster Mrs. MuntzZ. Like most good cocks, she can concoct countless var- bations on a theme,. Thus with the ald of the State of Mains Cookbook, she has suggested for us a lobster pie, based oa a recipe for «Three-Way Seafood Pile\ which appears on page 62 of that volume. So, for all traditionalists in upstate New York and for al children who have an aver- ston to vegetables, we suggest a retreat to 1621, and the preparation - of a - REAL Thanksgiving Dinner -- in the manner of the Pligrims who bad so much to be grateful for more than S00 years ago. Wwe think, also, it might be a challenge for the man in the bouschold to think through the blessing he will say at the table this Thursday, BR might be interesting to attempt to say a Thanksgiving \grace\ more in the style of the earl- ier New England settlers than in the manper of modern 20th century brevity. Roast Venison i desired, 3 or 4 strips of salt or fit pork may be inserted into meat at outset. Marirate roast for 24 to 48 hours using mixture of 2 cups dry red wine,; 1 lirge chopped onion; and 1 bay leaf. (1 1/ 2 cups apple juice and 1/ 2 cup vinegar may be sub- stinxted for wine) Turn roast occasionally. Remove and pat dry,; sprinkle with sah, pepper, and dash of cayenne pepper, Mest agrin may be covered with strips of sah pork if desired. Roast uncovered in 325° oven allowing 25-30 minmes per pound, besting frequently with marinade. For gravy skim ft from pandrippings; add enough condensed canned consomme to make 2 cups liguid. Bring to boil; remorefrom heat and blend in 1 / 3 cup hearycream.
