You can transport the soup in a wide-mouth insulated con- tainer, the sandwich loaf and brownies snugly wrapped and packed in a basket with utensils, napkins, cups, plates and bever- Chickan Pepper Pot Soup 2 Tbsp. vegetable oil 2 large celery stalks, diced 1 large green pepper, diced 1 medium onion, diced 3 medium all-purpose potatoes, peeled and diced 3 Tbsp. flour 5 cups chicken broth 2 Tbsp. hot pepper sauce Yi tsp. dried thyme V* tsp. ground allspice Vi tsp. salt V2 lb. boneless, skinless chicken breast halves V* cup fresh chopped parsley In a 5-quart saucepan over medium heat, in hot oil, cook cel- ery, green pepper and onion about 5 minutes. Add potatoes; cook 5 minutes longer, stirring occasionally. -Stir, flour into, mix- ture; cook 1 minute. Add chicken broth, hot pepper sauce, thyme, allspice and salt. Over high heat, heat to boiling; reduce heat - to low. Cover and simmer 10 minutes. Meanwhile, cut chicken breasts into bite-size chunks; add to vegetable mixture in sauce- pan. Cover and simmer 5 minutes longer until chicken and potatoes are tender. Stir in chop- ped parsley. Makes 6 servings. Muffuletta 9 3 /4-ounce jar green olive salad, drained and chopped V4 cup pitted black olives, chopped 1 large celery stalk, finely chopped 1V2 tsp. hot pepper sauce 8-inch round loaf crusty French bread or sourdough bread 3 Tbsp. olive oil Vi lb. sliced salami Vi lb. sliced baked ham Vi lb. sliced provolone cheese In a medium bowl, combine green olive salad, black olives, celery and 1 teaspoon of the hot pepper sauce. Cut bread crosswise in half; remove some of the soft inside from each half. In a small bowl, combine olive oil and remaining V2 teaspoon hot pepper sauce. Brush mixture in- side bread. Fill bottom with olive mixtures-Top with salami,._hain_ and provolone slices. Top with remaining bread half. Cut loaf into quarters. Makes 4 to 6 ser- vings. Sweet and Spicy Brownies 4 squares unsweetened choco- late 3 /i cup butter or margarine 2 cups granulated sugar 3 large eggs 1 cup all-purpose flour 1 Tbsp. hot pepper sauce V2 cup semisweet chocolate chips V2 cup walnuts, chopped In a small saucepan, over me- dium-low heat, melt chocolate squares and butter or margarine, stirring frequently. Preheat oven to 350 degrees F. Grease a 9- by 9-inch, baking pan. In a large bowl, combine sugar, eggs, flour, hot pepper sauce and melted chocolate mixture until well blended. Stir in chocolate chips and chopped walnuts. Spoon mixture into pan. Bake in a 350-degree F oven for 35 to 40 minutes until toothpick inserted in center comes out clean. Cool in pan on wire rack. Ketchup gives color, spice to simple apple-pie recipe By JOYCE ROSENCRANS Scrlppt Howard News Service Cooking with ketchup may be- scorned by the same food snobs who wouldn't be caught with a box of Velveeta in their shopping carts. But Heinz has a recipe for rosy apple pie that's the com- pany's most requested. Think about it. It's not so strange to put ketchup in pie as a tangy glaze for the apples. The tomatoes in the ketchup are fruit. They're spiced, sweetened and vinegared — all elements appropriate for apple cookery, too. And the bit of salt in ketchup sparks the apples. Minus ket- chup, apple-pie bakers need to include a pinch of salt in their apple mixtures. This recipe for Love Apple Pie (tomatoes more than a century ago were called love apples) is an open-face pie with a streusel top- ping,as fbfc Dutch apple pie. The Super Burger Sauce is a frequent summertime recipe re- ^quest, according to Heinz spokeswoman Deb Magness at the company's Pittsburgh head- quarters. Love Apple Pie V3 cUp tomato ketchup 2 tsp. lemon juice 5 cups cooking apples, peeled and thinly sliced (2 to 2Va lb.) % cup granulated sugar % cup all-purpose flour Yi tsp. cinnamon . Yz cup butter or margarine, thinly sliced 1 unbaked 9-inch pie shell Yield: 8 servings Prep time: 30 minutes Baking: 40 minutes Blend ketchup and lemon juice; combine with apples. In a smaller bowl, combine sugar, flour and cinnamon; cut in butter until mixture is crumbly, using a pastry blender or a few on-off turns of food processor steel blade. Have oven heating to 375 degrees. Line a 9-inch pie plate with a single pastry and flute a generous edge. Fill pie shell with apples; top with sugar mixture. Protect crust from overbrowning, if desired, by crimping narrow strips of foil around it. Bake at 375 degrees on bottom rack, 40- 45 minutes or until apples are tender. Remove foil 10-15 minutes before end of baking. Editor's note: If apples are very tart, as with Granny Smiths, add 1 or 2 tablespoons sugar with ketchup and <lemon juice. You won't need sugar if you blend ap- ple varieties; a good combo is Grannies and Golden Delicious.
