Even the manner of serving helps a great deal in the appeal of a fllsh. Pretty dishes, a tray spotless and brightened by a flower, all add greatly to the eagerness •with which the food Is received. ' Here are a few suggestions which may be varied as to the patlent'i taate or conditions: Bisque of Clim and Sago,—Boll an ounee of sago In Baited water—the wa- ter in which the saso has been soaked overnight Cook perfectly clear, or transparent, then add ono-half cupful of hot^ milk and a teaspoonfal of butter. Pat the Claras throusb a mutt grintler, bring them to the boiling point In their own llquar, add the tjgo, season to taste with salt an<l pepper, thicken with cracker crumbs and serve In a pretty bowl with th?a toasted bread. PineappU Pudding.—Place one-half cupful of water In a double boiler. When boiling add a tablespoonfal of sugar ami stir in the yolk of on egg mixed with a teaspcmnful of corn- starch. Stir until smooth nnd thick- then add one-half cupful of prated pineapple or pineapple Juice. Heat to boiling, then told In the stiffly beaten egg white and chill. Something to Eat. A most dellRhtfal salad combination Is pineapple and tomato. Tomato: and Plnnppl* Salat). —Pert ' medium- sized ripe toma- toes, removing a slice from the top of each, and take out the seeds und pulp. Sprinkle the Inside of the tomato cup with gait and Invert; let stand a half-hour. Fill the tomatoes with fresh pine- apple cut Into fine bits, or shredded, 1 and a few nuts, using two-thirds of a cupful of pineapple to one-third of a cupful of nut meats. Mix with a rich ; mayonnaise dressing and genre on a bed of lettuce. Mock Sweetbreads.—Chop one pound of veal, add two ounces of chopped salt pork and mix well. Then add two-thirds of a cupful of soft bread crumbs, two egg\ one-third of a cup- ful of flour, one-half cupful of milk, one-half teaspoonful of satt, one- eighth teaspoonful of pepper. Form Into eifitit cutlet-shaped pieces, dot with butter, usln? one and one-half tahlespoonfuls. and pour around three-, fourths of a cupful of chicken stock. Cover and hake one hour, basting every ten minutes. Serve with toma- to sauce. Stewed Chicken With Onlont.—Re- move the breasts and the second joints from two chickens. Cook in water to cover with -one dozen small onions, until tender. Remove the chicken, reduce the stocK to one nnd one-half cupfnls, by boiling; drnin the onions from the stock. Melt three tablespoonfuls of butter, add four tablespoonfuls of flour and the stock. Bring to the boiling point, add one- half cupful of heavy cream, season with saft, pepper and lemon Juice. Add the onions and chicken and bring to the boiling point. When venison time comes try: Roast Leo of Venison.—Lay a leg of venison In mild vinegar with one- fourth teaspoonful of ginger, one sliced onion, sis cloves and ten pep- ner corns. Turn once and leave two davi? Remove from the vinegar, wipe, season well, dredge with flour and roast as usual. Pineapple Dresiino.—Heat one cup- ful of pineapple juice until Jwst warm. Blend two tabtepoonfuls of^bjttei with one of flo«r, ( add two beaten egg volUs and two tablespoonfuls of tmgar, then the stifily beaten egg white*. Pour over the warm 5ulce and coos In a double b^ler until thick. Cool and add one-half cupful of whipped cream.
