A study of the nnalvs's of sour skim milk snowed It t o contain 00.77 per cent filter, O.10 per cent fat, R.93 per cent Milk sugar (lactose)', O.r.0 per cent lactic acid, 3.05 per cent protein and 0.79 ner cent milk ash or suits. It was assumed that water alone was not the Minmlat- ing factor. The fat content seemed too low. and the distribution of carbohy«feVf«s did not point to milk sugar as a possible source of the problem. A comparison was marie of rations conta f ning lactic acid, milk salts, protein--free sour skim milk thd sour skim milk*.
