The following extract is from the an nual address of President Adams, before the Wisconsin Dairymen’s Association : In round numbers we have 600,000 cows in the state. If all their milk was made into butter it would make less than 76,- 000,000 pounds. Under the average treat ment of soils and ammals it takes four acres to carry each cow a year, or 3,400, 000 acres to carry all of our cows. This is a yield of 31 pounds of butler per acre. Conceding that the value of the skim milk, and the calf, and the ma nure produced by each cow, is equal in value to her butter product, we would have a yield per acre equal to 63 pounds of butter. At 16 cents per pound, the average price for 1885, this would give an annual gross revenue per acre each year of $9.93. And this upon an estimate more liberal than the facts will warrant. When we recollect that the average man who makes a business of dairying gets from 17.5 to 300 pounds of butter per cow, and keeps her on three acres, and the good dairymen gets 350 pounds of butter per oow, and keeps his on two acres, we can see that the m ixed farmer w ill never break any eggs in his dairy basket, for he never has any. If our averages are discreditable and ex asperating, the sum total which we would get, by adding to our cows, our land, our markets, our dairymen and dairywomen, the dairy sense and knowledge of to day ural causes or by intentionally drying her bewildering. It is of the highest importauc.i to the dairyman that a thorough lest, not only of the milk and butter ability o f bis cov/s be made, but that their feedintr capacity be known as well, that he may determine with s6me degree of certainty to what extent they may be profitably fed for dairy work in order that he may reap the very best re turns lor his investment and his labor,says the J a ’f^q/ Bulletin, By no plan except by separate and individual experiments can this knowledge be gained with entire accuracy. Each animal must be tested separately, and those only should be re tained that prove themselves competent to convert a paying amount of proper food into milk to constitute them of value to his interest. Th ere is a class o f dairy cows, and it is a pretty large one, that is blessed with good appetites, and to a certain point the food consumed is converted profitably into milk, but beyond this it is diverted into the lormalionof flesh, aud when this point is rcach-.d the feeding for dairy returns is done at a loss. There are others again, that are especially constituted by nature to return in milk value the bulk of all the food except that required to sustain the animal system in thrifty condition, and re sults are not changed by increasing the food. This is the true type of a good dairy animal. This is demonstrated in the experience of every Jersey breeder as well as of those who have studied the habits of other breeds of cattle devoted to dairy usee. The principles and effects are the same, and whether the milk flow be large or is more concentrated in richness and quality, the cow especially adapted to returning the highest results in the particular direction for which she is intended will not lay on flesh during the time she is giving milk,no matter to what extent she may be fed or what may be the nature o f her food. This fact has been forcibly illustrated in the extreme high feeding for butter tests made with many of the notable animals of the Jersey breed, the increase of butter or milk invariably has followed increased food and no ap preciable addition of flesh was discerned. If this subject was given more prominence by breeders of pure bred dairy cattle and the ability to consume food profitably made a leading feature in breeding ani mals and as much importance given to it as is now attached to families and strains, very soon half the uncertainties in selecting a good dairy cow would be avoided. A few generations o f judicious mating o f animals known to be profitable dairy feeders, would fix a type that would prove o f far greater value to the dairy in terests of the country than can possibly arise from the use of anim a ls chosen simply because of their near or remote relationship to some great dam or sire that has a long list o f alleged heavy but ter makers or large milkproducers to their credit and for which high p ices are often paid, this consideration alone being the principal attraction. Not that it would be wise to depreciate the great importance of perpetuating the blood of animals that have proved themselves uotent in trans mitting to their progeny valuable dairy w( ability ; this is of vast importance and it It lage corn make it certain that two acres can carry a cow a year, with average soil* and average seasons. This would double our cows without increasing our acreage, and give 1,300,000 cows. Careful selec tion and breeding toward that type of the dairy cow made distinctive by the judg ment and genius of W. D. Hoard, will give us an average butter yield of 250 pounds per cow. Our 1,200,000 cows will then give us 300,000,000 pounds, and esti mating the by-products to have one-third the value of the butter in this case, have a total product equal to 400,000,000 pounds of butter. When we are smart enough to do this, our butter will be good enough to bring the highest price in market. With the sagging in prices cer tain to come with cheap production, it will be worth 18 cents per pound, and have a total annual value of $73,000,000, or three-fourths as much as all our daily stock, implements and dairy farms are worth in Wisconsin to-day. These figures may be considered chimerical, but they represent averages in good production and butter production less than those obtained this season upon scores o f Wisconsin dairy farms. We sometimes become tired in these dairy meetings of reiterating ihe old truths that are fundamental and vital in our business. But as long as more than half the cows in the State are kept at a loss, and 30,000,000 pounds of our butter are sold for nine cents per pound less than it would be if properly made, there is plenty o f primary work to do. These may have a pleasing effect to the eye, but a flesh-forming cow during her milking term is unprofitable in the dairy, and no matter how royal her lineage may be, she is not to be depended upon as a reliable breeder of profitable dairy stock. id know tbeir superiority.
