Mil k. —Tho milk producers in the neighborhood of Chicago have formed an association for tho protection of their interests. At a late meeting they decided to fij ; the wholesale price of milk for tho six months , beginning with October first , at eighteen cents a gallon. During tho summer it was twelve nnd a hidf cents a gallon. Tho association is new , but is growing in stren g th. F b ux t Twees —It has been suggested moro than once that in setting out fruit trees , they should bo placed in ' tho same position 'with referen ce to the points of the compass as before transplanting. The same idea is brought out in a recent article in Let Mondea , where tho neglect of this precaution is given as explainin g ¦ why some trees are weak , contorted and stunted. They became so , as tho -writer believes , in the efforts to recover their original \ orientation . \ The theor y is certainly a plausible one , and is well for those who are setting out trees to make a note of it. W hole \Whea t. —Wash a quart jf clean , -white -winter wheM ; , put it with •water in a farina kettle or in a tin pail set into a ke ttle of boiling water , the pail being kept from the bottom ci the kettle by a few nails or pebbl es thrown in. ' and cook it alowly for twelve hours ; or until this kernels are quite sofc. Both the kettle and pail should be J.e pt well supplied with hot water. Lot the bread rise until it is at leas t twice its former size; then , after kneading a great deal , mold out the loaves or rolls into smooth , regular forms ; wet them over with col d water to vrevent cracking, and set them to rise again under a clean cloth. When on touchin g one side they will quiver on the opposite side , they are sufficientl y light. Then wet again with cold water , and bake immedi- atel y. If fermentation 1ms not taken jilace at this stage , the bread will not he sufficientl y, li g ht; and if it is suffered to ferment after this , the bread will lose its sweetness. A tin kettle , with a closel y- fitting cover , is tho best thing in which \ to set your bread to rise , part iculnrl y when it is set over ni g ht to be hal ted lor break- fast. Plowin g Sand y Soils. — Spring is tho t imu. to p low sand y soils. If p lowed in the Autumn tho repeated freezin gs nnd thawing s of winter will so loosen and lighten them as to be easil y drilled and injured by freshets , whereas it is desir- able to fall-plow heavy clays , whioh are rendered friable by tho freezings nnd thawings of winter. Many farmers fear that to subsoil plow sandy soil would bo too loose , by lonohiug , nil tho manure they apply, forgetting that u very slight percentage of clay or carbonaceous mat- ter is sufficient to absorb nnd retain manures till used by plants ; for , if it ¦ were not so , th ere would bo few wells tho water ol which would be iit to drink , Th o (not is , that sandy soils , ns a rule , nr o greatly benefited by subsoil plowing. Such soils nro easily and greatly com- pacted by ruins , so much so ns to prevent tho eiisy penetration of tho roots of plnnls.
