Take the eggs out of tbe water quickly, wijp***nd place in pasteboard^ egg boxes,: which hold one doxen each. Should any of the eggs crack during the hot water process, they most not be packed, as they would spoil, It i s not necessary to have the water boiling too haTd, but juSjifft the boiling point; place the eggs in the box, small end down. When tbe box is full arid the ? eggs sire eold, tie? the: box with common store string and pat down in the cellar. You should date each box, so as to use the oldest eggs first, Some will say: ,ir Wby, will it not soofc: tbeeggs to pour boiling water over tbem? % Yes, to be sure i t will, a trifle, only next to the shell, therefore filling pores of eggshell and keeping out all air, so there Is no possible chance for them to spoil. You will be surprised what JbyelyjBggs you will have ail winter. Perhaps it would be best i&, Mf only a few at first, to test, before putting down s6ta supply for r $be wibter.*By the way, these egg boxes can be had a t any grocery store for 1 cent each or 10 cents per dozen boxes. The time to pack eggs Is in tbelatter pait of August, Sep- tember or early part of October, while eggs are at a reasonable pries. It is well not to pack them too early. Perhaps some would like to know how to test eggs to know if tbey artfreeb.'.
