Boiled onions—Take off outside skin, at off both end*, let stand in cold water n hour , then drop them into a saucepan ontaining two quarts boiling water; oil fifteen or twenty minutes,; saucepan last \HS closely covered ; then pour off lit water ; then boil a half hour longer i two quarts ot fresh boiling water ; — >ald a cupfull of nice fresh milk, thick- ned with a little flour ; season to taste nd boil flvo minutes, and serve whole.— \hit destroys the strong, disagreeable *te ami smell of the onions, and will ot produce heartburn. Orange cake—Five eggs, leaving out He whites of two, one and a half cup* of Ugar, two of flour, one half cup of water; juice ot one orange and the yelloir of tts^rind graVd, one half tea tpoonful of cream of tartar, one quarter featpoonful of soda. For jelly : Whites of two eggs, one orange and sugar to mix like icing. The sugar for the -cake is boil- ed in the water «nd used eoldV Bake in layers as in any jelly cake. Citron cake—Three cups of sugar, one of butter, one of sweet milk, four of flour, one teaspoonj^ul cream of tartar, one half teaspoonful of* sod^ half a pound of citron out fine and thin, and the whites of ten eggs beaten very light.
