NEW CASTLE NEWS, FRIDAY, MARCH 16, 1951 • 11\ HOUSEHOLD MEMOS by Lynn Chambers It's Time to Bake a Luscious Cake (See Recipes Below) Cake Magic jpERE'S NOTHING nicer than a^elicious, fluffy cake on hand for birthdays, for company that may pop in unexpectedly, or for the sewing circle gathering! One of the all-time favorites is Chocolate or devil's food with a fluffy white icing. Close on its heels, vying for honors is the delicate white cake often frosted with Seven Minute frosting and '^lusting of moist coconut. {|Phirnt sugar cake has an inter esting flavor, as,has the caramel frosting-which goes with it. Deluxe White Cake (Makes 2 9-inch layers) : Measure into sifter: 2* cups sifted cake flour 2& teaspoons double-acting baking powder 1 teaspoon salt 1£ cups sugar 4keasure into cup: 1 teaspoon vanilla 1 cup milk Measure into bowl: 2/3 cup vegetable shortening Have ready: 5 egg whites, beaten to meringue* with i cup sugar *For meringue, beat 5 egg whites with rotary egg beater jjt high speed of electric mix- intil foamy, add \ cup sugar lually, beating only until leringue will hold up in soft peaks. Have the shortening at room temperature. Grease pans, line bottom with waxed paper, and grease again. Use two deep 9- inch layer pans or a 13x9x2-inch pan. Set oven for moderate heat (350°). Sift flour once before manuring. mix or stir shortening just to scften. Sift in dry ingredients; and g of liquid. Mix until all flour Is dampened; then beat 1 minute. Add remaining liquid, blend, and beat 2 minutes longer. Then add meringue mixture and foeat 1 minute. (Count only actual beat ing time. Or count beating strok es. Allow at least 100 full strokes per minute. Scrape bowl and spoon or beater often.) Turn bat ter into pans. Bake in moderate oven (350°) about 35 minutes for layers, or about. 45 minutes for i3x9x2-inch cake. Devil 's Food Cake (Makes 2 9 -inch layers) Measure into sifter: 2 cups sifted cake flour 3 teaspoon salt 1 teaspoon soda 1 cup granulated sugar Measure into cup: 2/3 cup buttermilk 1 teaspoon vanilla Measure into bowl: \ cup vegetable shortening Have ready: & cup brown sugar, firmly packed 2 eggs, unbeaten 3 squares unsweetened choco late, cut up and melted in - I cup boiling water Have the shortening at room temperature. Grease pans, line bottoms with waxed paper, and grease again. Start oven for mod erate heat (350°). Sift flour once before measuring. Sift dry ingredients. Add brown sugar—force through sieve to remove lumps, if necessary. Add eggs and h of the liquid. Mix until all flour is dampened; then beat 1 minute. Add remaining liquid, blend, and beat 1 min ute. Add chocolate mixture and beat 1 minute longer. (Count only actual beating time. Or count i beating strokes. Seven Minute Frosting (Makes enough for 2 layers) 2 egg whites 1& cups sugar 14 teaspoons light corn syrup or i teaspoon cream of tartar 1/3 cup cold water Dash of salt 1 teaspoon vanilla Few drops red food coloring Place all ingredients except vanilla in double boiler; mix thoroughly. Cook over hot water, beating constantly with rotary or electric beater until mixture forms peaks, about 7 minutes. Remove from heat and hot wa ter; add vanilla and food color ing. Beat until cool. '''Burnt Sugar Cake (Makes 2 8-inch layers) J cup shortening 14 cups sugar 2 egg yolks 1 teaspoon vanilla 2& cups cake flour i teaspoon salt 2 A teaspoons baking powder 1 cup water or milk 3 tablespoons Burnt Sugar 2 egg whites, stiffly beaten Thoroughly cream shortening and sugar; add egg yolks and vanilla; beat until fluffy. Add sifted dry ingredients alternately with water, beating well after each addition. Add Burnt Sugar and fold in egg whites. Bake in 2 waxed-paperlined 8-inch layer- cake pans in moderate oven (350°) about 30 minutes. Put lay ers together and frost with Caramel-Nut Frosting. Burnt Sugar: Melt £ cup white sugar in heavy skillet over low heat until dark brown and smooth. Remove from heat; add h cup boiling water; return to heat and stir rapidly until mo lasses-like syrup melts. Stir over low heat until uls- solved. Heat to boiling and cook to softball stage (234°). Beat un til cool. Add vanilla. Spread be tween layers and on top and sides of 2-Iayer cake. Sprinkle with chopped walnuts. LOW RATE LYNN SAYS: Add Fanciful Touches To Everyday Foods Add some finely chopped spin ach to pancake batter and make spinach pancakes. Serve with pot roast or as a vegetable. This is guaranteed to make spinach a fa vorite even amongst those hard to convert. Chopped liver seasoned and mixed with bread crumbs and egg makes a first rate main dish especially when the patties are wrapped in bacon and cooked with tomato sauce. Leftover pieces of fish are just the thing to add to a crisp green salad, served with a lemon- French dressing that's really tart. When serving sauce with fish, take a bit of time preparing at tractive lemon cups for serving the sauce accompaniment. Halves of lemon, scooped out and scal loped at edges are lovely. Frankfurter scallop is easily made with sliced frankfurters and scalloped potatoes. Fletcher. Releasing official 1950 highway accident facts of the State today, Commissioner Fletcher said mo- ! tor vehicle deaths last year to talled 1,996, compared with 1,947 in 1949, an increase of 2.5%. The 1950 death rate per 100 million miles of vehicle travel in the State was 6.1, lowest in the 26- year history of the Bureau of Motor Vehicles.
